Cooking Thursday

Menu Plan Monday - Back on the Wagon

You'd think it would be old hat, how to find my footing to climb back on the menu planning wagon, given how many times I've fallen off.  Yet here I sit.

This past week I've had much to be thankful for, even still I had a stressful, unpredictable week.  The result was a week of eating like crap.  3,000+ calories some days!  I even "carb loaded" for my 14 mile long run with Wendy's: son of a baconator, fries, dr. pepper, and a frosty.  Needless to say, it was an ugly run.

All of that changes today.  Or rather Saturday.  I was careful with my food choices that evening, saving 800+ calories that I didn't eat back from my run.  Good thing, because I went to a birthday party yesterday and ate back 600 of them. 

Starting today, all my meals (including snacks) will be pre-planned.  The grocery list is made and the oreos are in safe keeping.  Here goes!!

Monday: Oatmeal, biscuit/Greek yogurt/Protein shake/PB&J, chips/broccoli Alfredo
Tuesday: Cereal/fruit & almonds/meatloaf, veggies, potato casserole/protein shake/chicken tacos
Wednesday: Egg biscuit/Greek yogurt/chocolate milk/meatloaf, veggies, potato casserole/Jay's choice
Thursday: Oatmeal, fruit/Greek yogurt/veggisaurus chili/protein shake/Stroganoff, green beans
Friday: Egg biscuit/fruit almonds/Out-to-lunch (w/mom)/Herb roasted chicken & rice, mixed veggies
Saturday: Lara bar/sports beans/chocolate milk, fruit, bagel/????????????????????????

We're planning a 12-14 mile run on Saturday, so I'm leaving the afternoon/evening open to see where my hunger and social calendar take me.

Meal Plan Mo...Tuesday

I have got to get back into the meal planning routine.  I've been almost as slack at is as blogging!  What's better than mixing them together for a little accountability? 

I actually did my plan this weekend, but forgot to blog it...so here goes!

Sunday: Fast food

I worked church both Sunday morning and Sunday evening.  Hit the drive through on the way home.  I'm thinking about designating this as Jay's 2nd night of the week to take care of dinner. 

Monday: Baked chicken & veggies

This one I planned well enough to have the chicken thawed in the fridge by the time it went into the oven last night.  I was exhausted from insomnia the night before, so it wasn't the greatest time for me to bake extra to freeze.  However I had 4 huge split breasts (ewww - never going the bone-in route again!) and 2 of them needed to be pulled after dinner.  The plus side is I have 3 servings of frozen chicken for future use.

Tuesday: Veggisaurus chili

Not sure where I got the recipe for this, or I'd link it but I have tweaked it along the way.  I use whatever bean I have on hand (tonight its black beans) and whatever green vegetables which are in the fridge (green peppers and zucchini).  I've already got it in the crock-pot, so we can eat whenever we take a notion this evening.

Wednesday: Jay's night

Every other Wednesday, I head to Knoxville to meet up with the KTC Socialites for a group run then dinner to follow.  Kelly & I also try to once a month volunteer at the Lost Sheep "under the bridge" ministry.   All that to say, I'm rarely home early enough to actually cook.

Thursday: Breakfast for dinner

Scrambled eggs, peppers & onions, sausage, and biscuits!

Friday: Cheesy rice and beans

I'm trying to eat from our pantry as much as possible before we move, so I'm not sure I have the diced tomatoes with green chilies the recipe calls for (used a can in today's chili), but if not I'll use a can of diced tomatoes and a can of green chilies.  Close enough right?

All this food talk reminds me - I owe y'all a "Justus potatoes" recipe.  I've never made them so I'll do some homework (aka call my mom) and post it next week.

Meal Planning Monday

If I'm honest (and those who know me say I'm honest to a fault), I haven't truly meal planned in ages.  Sure I've looked at the calendar and guessed here and there.  Setting out at the first of the week to plan all of our meals?  Just hasn't happened. 

Life is busy and stressful.  And I'm lazy.  And don't enjoy cooking.  (Since we're already on the honest train.)

I am going to make a concentrated effort to get back at it though.  We've got a full pantry of things that need to be consumed and our grocery budget has been gradually creeping up month after month because of my laziness.

One awesome new change, is the addition of an extra cook in the house.  Jay has taken over Tuesday/Thursday food responsibilities.  I love being able to come home from work and just crash (or get straight to laundry/cleaning the bathrooms/dusting/etc.)

This change has come at the cost of healthy eating, but I just don't care.  I'm falling back on many of the tried and true easy dinners I use to fix a few years ago when we were first married.  For this week, time to make a plan!

Monday: Chicken Helper

I toss in some frozen broccoli to make it stretch a bit further.

Tuesday: Cheddar Brats

Jay's one request to taking over some of the dinner responsibilities is that I buy things at the store easy for him to prepare.

Wednesday: Ham sandwiches

I'm doing a Knoxville Track Club social run that evening.  If we don't stop by Barley's for dinner following the run, I'll just make sandwiches when I get home.  Add a pepper jack cheese, a hamburger bun, and a toaster over and all of a sudden sandwiches seem yummy!

Thursday: Pizza

Jay's perfecting the art of frozen pizza on the grill.

Friday: Baked Ravioli

I'm uber lazy with this one: some frozen ravioli, a jar of spaghetti sauce and mozzarella cheese.
